Ingredients
1 lb ground beef (85% lean)
14 oz can diced tomatoes (undrained)
8 oz shredded cheddar cheese
2 cups cornmeal mixture (cornmeal, flour, and spices)
1 cup corn kernels (frozen or canned)
1 cup finely diced onion
2 cloves minced garlic
1 tbsp chili powder (adjust for heat)
2 tbsp olive oil
1 1/3 cups non-dairy milk (cashew or oat) (optional add-ins: diced potato)
Instructions
Preheat oven to 375°F (190°C). Dice onion, mince garlic, and measure all ingredients.
Grease a 9×13-inch baking dish and spread corn kernels in the bottom to control moisture.
In a skillet, brown the ground beef with onions and garlic over medium-high heat; drain excess fat.
Stir in the cornmeal mixture, diced tomatoes, corn kernels, and chili powder; mix well.
Pour the mixture into the baking dish. Top with shredded cheese and non-dairy milk to create a creamy surface.
Bake for 25–30 minutes or until the top is golden and crispy. Allow to cool slightly before serving.
Notes
Use 95% lean ground turkey as a lighter alternative to beef.
For a heartier texture, substitute the cornmeal mixture with grits.
To enhance flavor, add 1 cup of diced potatoes to the filling.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
