Ingredients
2 lb skinless chicken breasts
1.5 cups white rice
2 tbsp soy sauce
1 large onion
4 cloves garlic
1 tbsp chili powder
2 cups chicken broth
1 tbsp vegetable oil
Instructions
Pat chicken dry. Sear in 1 tbsp oil over medium-high heat, skin-side down 3-4 minutes until golden.
Add onion, garlic, and chili powder to seared chicken. Cook 3-4 minutes until onions soften.
Deglaze pan with chicken broth, scraping up browned bits. Add soy sauce and stir.
Increase heat to bring to boil, then reduce. Add rice, pressing into saucy base for flavor infusion.
Cover and reduce heat to low. Cook uncovered 8-10 minutes until sauce thickens and rice absorbs liquid.
Monitor closely in last 5 minutes to prevent drying—add ½ tbsp water at 5-minute mark if necessary.
Notes
Use flat thighs for extra moisture; adjust cook time if using breast. Substitute 1:1 broth with water if adjusting sodium. For richer flavor, let rest 5 minutes before serving.
