Ingredients

2 (6 oz each) chicken breast fillets (skinless, boneless)
1 lemon (juice and zest)
1 large head romaine lettuce (chopped)
3/4 cup eggless Caesar dressing
2 garlic cloves (finely chopped)
1 tablespoon olive oil (for marinade)
1/2 tablespoon olive oil (for cooking)
1 teaspoon salt


Instructions

Juice lemons into a bowl and add 1 tbsp olive oil
Whisk garlic with 1 tsp salt until paste forms
Combine with lemon oil, then stir in chicken. Cover and refrigerate 10 minutes
Heat 1/2 tbsp olive oil in a skillet over medium. Cook chicken 5-6 minutes per side
Let chicken rest 3 minutes, then shred with fork

Divide romaine mixture among warmed pita halves
Top with shredded chicken and drizzle remaining 1/3 cup dressing
