Description
A hearty blend of al dente pasta, crisp romaine, tender grilled chicken, and zesty Parmesan Caesar dressing. Creamy, crunchy, and perfectly balanced for a crowd-pleasing main dish or salad.
Ingredients
Skinless Chicken Thighs (1.5 lbs)
Penne Pasta (8 oz)
Romaine Lettuce (4 cups chopped)
Garlic Caesar Dressing (1 cup)
Fresh Parmesan (1/2 cup grated)
Croutons (2 cups)
Olive Oil (1 tbsp for drizzling)
Lemon Juice (1 tbsp)
Garlic (2 cloves)
Salt and Pepper (to taste)
Instructions
Preheat oven to 425°F (220°C). Heat olive oil in a skillet until shimmering.
Sear chicken skin-side down for 3 minutes. Flip, season with salt and pepper, and cook 6-7 minutes until 165°F (74°C).
Cook 4 quarts boiling water, add pasta and cook 8-10 minutes. Drain completely.
Finely chop romaine. Toss croutons in 1 tbsp oil and toast in oven 5 minutes.
Mix dressing, 3 tbsp olive oil, 1 tbsp lemon juice, and 2 garlic cloves.
Combine pasta, romaine, croutons, and dressing in a bowl. Add cooked chicken and Parmesan.
Notes
Use rotisserie chicken to save prep time
Gluten-free pasta is an acceptable substitution
Reserve 2 tbsp dressing to drizzle on top before serving
Toast croutons until golden for maximum crunch
