Ingredients
2 lbs chicken breast (cut into 1.5-inch slices)
1 cup all-purpose flour
2 large eggs
1 cup buttermilk
1/2 cup mayonnaise
2 tbsp honey
1 tbsp sriracha
2 tbsp rice vinegar
1 cup panko breadcrumbs
Salt and black pepper, to taste
Instructions
Pat chicken slices dry with paper towels
In a bowl, mix flour with 1 tsp salt and black pepper
In a shallow dish, whisk eggs
Dip chicken slices into egg mixture
Dredge coated chicken first in flour mixture, shake off excess, then press into panko breadcrumbs
Heat oil in a skillet over medium-high heat
Working in batches, fry chicken until golden and fully cooked (3-4 minutes per side)
Transfer to a wire rack or paper towels to drain
In another bowl, whisk mayonnaise, honey, sriracha, and rice vinegar to make sauce
Stack chicken onto buns and top with sauce and coleslaw
Notes
For extra crispiness, use cornstarch mixed with flour
Substitute buttermilk with 1 cup milk + 1 tbsp lemon juice
Replace mayonnaise with Greek yogurt for a lower-fat option
Use apple cider vinegar if rice vinegar is unavailable
