Description
Tender marinated beef and buttery potatoes in a rich garlic herb sauce, cooked to perfection in a slow cooker for a hearty, no-fuss meal.
Ingredients
1.5 pounds beef stew meat (1-inch chunks)
1 tablespoon non-alcoholic Worcestershire sauce
3 cloves garlic (minced)
3 tablespoons unsalted butter
1 cup sliced yellow onions
1 teaspoon garlic powder
Salt and black pepper (to taste)
3 cups cubed Russet potatoes
2 tablespoons chopped fresh parsley
Instructions
Place beef in a large bowl
Mix minced garlic, Worcestershire sauce, garlic powder, salt, and pepper in the bowl
Toss beef to coat; set aside
In a separate bowl, cut butter into chunks; layer onions, butter, and potatoes in slow cooker
Add seasoned beef chunks to slow cooker
Cover and cook on low 6 hours or high 3 hours
Stir halfway through cooking; sprinkle fresh parsley before serving
Notes
Use garlic powder for extra flavor
Yukon Gold or sweet potatoes can substitute Russets
Store leftovers in an airtight container for up to 3 days
