Description
These soft and chewy cookie bars are a one-bowl wonder! Quick to prep, endlessly customizable, and perfect for any season.
Ingredients
1/2 cup (1 stick) unsalted butter, melted
1 cup light brown sugar, packed
1 large egg
1 tsp vanilla extract
1/4 tsp salt
1 cup all-purpose flour
1/2 tsp baking powder
1/2 cup semi-sweet chocolate chips
Optional: chopped walnuts, peanut butter chips, shredded coconut
Instructions
Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.
In a medium bowl, mix melted butter and brown sugar until smooth.
Add egg and vanilla extract, whisk until fully combined.
Stir in salt, flour, and baking powder until just combined.
Fold in chocolate chips and any optional mix-ins.
Spread evenly into the pan and bake for 20–25 minutes or until golden and a toothpick comes out clean.
Let cool in the pan for at least 15 minutes. Slice and serve.
Notes
For extra chewy bars, remove from the oven as soon as the center is set.
Customize with s’mores ingredients, Nutella swirls, or crushed pretzels for texture.
Store in an airtight container for 5 days, or freeze for up to 2 months.
