Description

These soft and chewy cookie bars are a one-bowl wonder! Quick to prep, endlessly customizable, and perfect for any season.


Ingredients

Scale
  • 1/2 cup (1 stick) unsalted butter, melted

  • 1 cup light brown sugar, packed

  • 1 large egg

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1 cup all-purpose flour

  • 1/2 tsp baking powder

  • 1/2 cup semi-sweet chocolate chips

  • Optional: chopped walnuts, peanut butter chips, shredded coconut


Instructions

  • Preheat oven to 350°F (175°C). Grease or line an 8×8-inch baking pan.

  • In a medium bowl, mix melted butter and brown sugar until smooth.

  • Add egg and vanilla extract, whisk until fully combined.

  • Stir in salt, flour, and baking powder until just combined.

  • Fold in chocolate chips and any optional mix-ins.

  • Spread evenly into the pan and bake for 20–25 minutes or until golden and a toothpick comes out clean.

  • Let cool in the pan for at least 15 minutes. Slice and serve.

Notes

  • For extra chewy bars, remove from the oven as soon as the center is set.

  • Customize with s’mores ingredients, Nutella swirls, or crushed pretzels for texture.

  • Store in an airtight container for 5 days, or freeze for up to 2 months.
